I really like Nicoise salad. It’s so filling, and so tasty. Unfortunately, it’s also pretty tedious. You have to blanche the beans and boil the potatoes. You have to hard boil the eggs. You have to chop everything, and make the dressing.
So last night, I made what I called a half-Nicoise salad.

I had salad greens with arugula and alfalfa in the fridge, and some tuna leftover from breakfast, so I put them in a bowl. I hard-boiled an egg and sliced it up. Then I sprinkled olive oil and lemon juice over everything, and then a generous helping of parmesan cheese.
Easy, and delicious!
